- 1/2 cup mashed sweet potato
- 2 chia seed "eggs" (2 tbsp. ground chia seeds + 6 tbsp. water)
- 1-2 tsp. cinnamon
- 1 tsp. ground ginger
- 1 tsp. vanilla
- 1/2 tsp. baking powder
- 2 tsp. coconut oil
Whisk together all ingredients in large mixing bowl and pour rounds onto greased (with coconut oil) skillet or pan. Cook until browned edges (should be pretty soft and gooey). Top with ground cinnamon and ginger and your favorite maple syrup.
